Installing EMG 81 and 85

ok. i bought emg pickups yesterday and i think its fairly easy to install them i just have 1 question. they both come with a volume and tone knob together. my guitar only has room for 3 knobs. would it be safe to take off the wires going to one of the knobs? and how would i wire my guitar to have a volume for 1 pickup and a volume for another and then a master tone knob?thank you.
