How much control will a midi keyboard controller give you?

I'm sure this is a silly question, but how much control of your daw will something similar to a novation le 25 give you over your entire DAW. I know these types of devices can control midi channel volumes, pans, etc. and that you can have them operate your transport controls for the most part. But are the knobs also able to be setup to control your AUDIO volumes, pans, plug-ins, etc. in a DAW mixer?

Yep they sure can.

Some DAWs make it easier than others though. My M-Audio O2 comes with a preset editor which lets me create custom profiles for a particular DAW if the DAW doesn't support it already.
