Midi editing
Something i noticed the other day. When i open a midi part, i can edit the velocity by default....but theres many other options available to me (eg afterbreath) that can also be edited..the thing is, I dont know their application...i only know velocity is the amount of pressure exerted on the 'instrument', like, how hard youd hit a drum

You just select it from the list, and draw lines, curves, whatever. Now, in order for these to have any sort of effect, your VSTi must be able to respond to it. On some instruments these continuous controllers are hardwired to specific things. On others they are freely assignable. Check out the documentation that came with your MIDI instrument (VST or hardware) to find out more about its MIDI capabilities and what controllers are assigned to what (if any).
