I'm about to buy an interface that comes with LE...

What does SE include that LE does not? And is it worth the extra $100 to go ahead get SE instead?

SE has a few extra effects slots and unlimited midi. Otherwise, not much difference.

Yes...

Better inputs - more simultaneous inputs - SE3 has a better engine.

The list goes on and on.
