Tube mic power supplies interchangeable?

Before I just plug 'em in and try it, are they pretty standard or do they vary enough so that this is not a good practice.

The few that I have all vary. The old GT are different from the new GT, and they are both different from the Gefell that I have. I'd be real careful.

Varying brands and types will be wired differently. You have to know which pins carry audio, filament voltage and plate voltage. A mic which has variable patterns does so by adjusting the voltage to the back diaphragm. Also, different circuits and tubes require different plate voltages. If you plug a mic where the plate for the tube is 100v under load and it's getting 200v, you can blow the tube. Same with the heater.

If your talking an Apex 460 and a Nady TCM1150, no problem. They're the same. I'm pretty sure the PS for my V69 is the same as my TCM1100, but I'm going to measure the outputs to be sure.

I'm going to say no, not unless you get really lucky. There's no conventional pin-out for 7pin XLR's like there is for the standard 3 pin.
