Are you allowed to Use signature gear live?
if you are in a signed band and are famous or not famous, are you allowed to use signature products like amps and guitars? or is it breaking some copyright law or idk

Yes, you should be able to. I would believe that the signature model simply shows that the person who's signature it bears is paid to endorse said model, not that he has the exclusive rights to use it.
