Balanced vs Unbalanced

Can someone give me the low-down on the difference between balanced and unbalanced cables. I can tell the difference between the physical cables but would really like to know the overall difference in use.

When and why do you use balanced as opposed to unbalanced cable and what are the pros/cons/major differences???
