How well do you think a gold covered humbucker would look on this guitar? Or would it stick out like a sore thumb and just look bad?

I did a little better job at what it would look like. I was going to do the other pickups too, but it looked bad.

That's actually pretty cool. It makes the pickup the highlight of the body (in addition to the celtic sticker), rather than the electronics, which aren't as appealing to the eye.

Does anyone have any thoughts on the Golden Age overwound humbuckers from Stewart Mac?

I had a guitar kind of like that. I put an F-250 pickup on it. Didn't do much for it.
