Hey all, im just wondering, what mics is it that picks up the symbols and high-hats?, is it the overheads?

Yes, it's usually the overheads. Some people will use a mic on every cymbal at times, but generally 2 overheads get the job done.

Overheads yes, but I refer to mike the Hi-hat also.
If you want a good one get a matched pair of Oktavas.
