live recording FX80

I'm new to recording and find that the fx80 owners manual can be confusing. I'm just working on the basics now and want to record live performances. I tried it out with one mic (knowing that it would be mono). During playback the track 1 indicator was on as well and the right and left monitor gauges. During playback from the hard drive both speakers played but after burning a cd only one speaker worked on some systems and two on others.

Also,I assume I can only get stereo sound with two mics, right? If using just one mic for live recording what is the best way to configure the recorder?
