I would start with the manual and concentrate on audio first and midi later.
To be this new will require a good bit of reading and then experimenting.

Cool

You got a lot of homework to do Cubase is a preferrable software to use for recordings. Use the Cubase help and see where midi is configured. Click on all the menus under options and you will figure it out. If you have a specific question it is easy to answer, general questions are too much to answer. Be specific, if you have a question in Cubase write it in that particular Cubase forum, if you have a midi question post it here and that way you can gather all informations and put the pieces together.
From the setup you have, you are absolutely ready to do all midi sequencing, but audio recordings you need a quality soundcard and some decent speakers. The basic process is
1. Play your Keyboard
2. Record midi in a midi track (Cubase)
3. Run the midi Track
4. Record audio track in Cubase.
5. Bounce all tracks to one stereo track (done)

Every step has a lot of things to do, so start reading the manuals and help and others questions from the forum. Good Luck man!
