I got fooled by that when I bought my Xenyx. It's 2-channel USB only - they ship you a mixer and a basic RCA interface. No way to get channel-for-channel. Best I've managed is pan hard left and right on channels one and two for true 2-channel recording.
Whatever gear you have, spend as much time learning how to use it properly as possible. As a followup to the post above, great gear is only great in the hands of someone who knows how to use it.
One thing I always do when I hear unexpected results on a track is I do a quick scratch mix to see if it's likely to be a problem in the final product. Some things just can't be heard, or can be safely EQd away...
I've made performance videos using a 2-in interface, before. Set up your DAW with effects - Then again, I've never done it as a live broadcast, only as a video.
