...and vocals my preference is to go with one ear off.
My left ear hears my real acoustic performance and my right hears the mix or backing.
To be honest, I usually just mute what I'm recording; I don't want to hear that in the cans at all.
Think I understood the Q correctly - and yeah, same for me. When recording vocals, I prefer taking one ear off the headphones, though not completely off, but just slightly removed. I'd guess I keep that ear about 50% covered, but the other ear 100% covered. Whatever gets me hearing the pitch of the music and the pitch coming from me correctly.
When both ears are 100% covered, I find that I'm not as on pitch as I thought.
