What is a good monitoring volume in headphones when recording?

...and vocals my preference is to go with one ear off.
My left ear hears my real acoustic performance and my right hears the mix or backing.
To be honest, I usually just mute what I'm recording; I don't want to hear that in the cans at all.

Think I understood the Q correctly - and yeah, same for me. When recording vocals, I prefer taking one ear off the headphones, though not completely off, but just slightly removed. I'd guess I keep that ear about 50% covered, but the other ear 100% covered. Whatever gets me hearing the pitch of the music and the pitch coming from me correctly.

When both ears are 100% covered, I find that I'm not as on pitch as I thought.
 
Hey OP. For one used closed back headphones. That will eliminate bleed. Then it's just experimenting until you find a balance. You'll get a feel for it as you go and there isn't any magical setting since all headphones (and their amps) are different. Another trick is to turn off the bass when recording vocals. We don't hear low end as accurately so having it in there might make you off pitch.
