Record in MONO or Stereo?

Hi guys!

Newbie to home recording...

Do you guys record your tracks (instruments and vocals) in MONO, and then copy the track to stereo (using panning), or record in stereo?

For Guitar, I've stereo out, into my mixer then down to my PC - have you found any pros or cons for doing it either way?

What about vocals?
 
Most tracks are recorded mono. The exceptions are sources which are meant to be heard in their surrounding spaces, e.g., choirs, real pianos, ensembles.
 
Stereo recordings can sound very nice and realistic. An acoustic guitar for example sounds better in stereo, but when the guitar ends up in a dense mix it doesn't matter.
