Garage band stereo recording

Set up two "Real Instrument" tracks. In the right sidebar, set the first real instrument track to record with Input 1 and the other real instrument track to record with Input 2. Pan the first track all the way left and the second track all the way right. Record arm both tracks by clicking the small red dot on the far left of each track. Hit the big red record button and you should be good to go!
 
And if you want to record stereo to a single track, you should also be able to find an option that says "Input 1/2" at the bottom of the input selections. It automatically pans the two recordings hard left and hard right.
