So my first interface is likely going to be the Scarlett 18i8 from Focusrite. The description tells me that I can connect even more Mic pres from a different interface with the optical ADAT connection, but of course they want me to buy their 18i20 to go with it. My noob question is as follows: When I get the funds of course, can I buy a interface not from the scarlett series to go with the 18i8? What determines the compatibility between the two?

If you buy an 18i8 that'll be your interface. You don't need to buy another one to expand.
What you're looking for is a set of preamps/converters to add 8 more channels via adat. Ie. no usb/firewire etc.
Compatibility isn't an issue as long as you know about sample rates (8 channels at up to 48k, 4 channels at 96k, I think).
Any brand will be fine...Presonus, RME, Behringer etc.
