So I have this mixdown @ 16 bit and 48K right now. I need to get it to 44.1 without changing the pitch, using only Soundforge and a basic version Samplitude. What is a semi-exceptable way to do this?

open it up in sound forge...go to process--> resample...choose the preset from the sample menu for 44.1KHz and make sure "Set the sample rate only" is unchecked. To confirm that it worked correctly, go to file-->properties

I read a few years back a post by Steven Paul that he liked Soundforge for re-sampling.
