The neat thing about beamforming is that you can record the separate signals from an array of mics and use the beam forming software to pick out different voiced after the fact.

Hi,
I do music recordings, multilingual voice overs and transcriptions when I go to a press realease. My advice is to get either a good recording equipment (Jonh Lewis, Amazon you can find them). Of course, it will be noise if it is in a public area but you can make the sound better if you obtain some handheld microphones so that the voices can be heared clearer. Also, the recorder should be in the middle of the table so that the noise comes with the same intensity from every point.
