newbie interested in various recording technics

I've been using Audacity for A few years now to record streaming audio on my PC.
All music is FROM cd's(no mp3) E MU souncard is set at 24/48khz.(maybe it's 32 bit
float) anyway, the quality is good, but I am curious of how you would record this
type of media?
 
Since CD quality is 44.1kHz/16-bit, there's no original data if you extract anything but that, i.e., without the D/A -> A/D thing you're doing. Then, in effect, what you're doing is capturing the recreated audio, which depends a good bit on those conversions.

So, in the past I would have used software like Exact Audio Copy (EAC) to WAV or FLAC and then either converted manually or let iTunes have its way, i.e., I would have extracted the non-lossy audio file from the CD to computer, and then if I wanted to make a lossy version, done that.

TBH, most CDs I buy simply to replace old vinyl I rip directly to MP3, unless I want to capture a reference track.
