I have a digital accordion which works very well. I decided to order a replacement midi cable for it. With the new cable, some of the keys and buttons play extra notes when I play.

Sounds like a bad cable. Since it's digital, it's just zeros and ones. "Noise" in a digital line is going to be extra or missing zeros and ones. The receiving end doesn't know it's not part of the original signal (just as an analog preamp will make line noise louder). Ask for a replacement.
