I'm a fan of the Garritan libraries.
    GPO4 for classical sounds.
JABB3 for jazz and big band.
COMB for concert and marching band.
You have to know how to use the MIDI controllers to get the best out of them, but the results can be astonishing.
There's lots of demos at the Garritan web site.

I will go with Garritan too. Also worth considering is the surprisingly good freebie Sonatina Symphony Orchestra, available as sf2 or in Kontakt format. The latter conversion was done by a member of the REAPER Forum.

    Speaking of Garritan..
There's a guy called Giorgio Tommasini who (among other things) developed the sample libraries "The Stradivari Violin" and "The Gofriller Cello" together with Garritan.

He's now running his own company called "Sample Modeling" and they make the best brass libraries out there!
There's no competition really, they're the best!
    (If you ask me, anyway..)
..Just listen to their demos and I'm sure you'll feel the same afterwards

.. I wasn't allowed to post a link to their site, cuz I'm too new to this forum..
But It's "samplemodeling.com", with that world wide web start, you know :P

    Cheers!

And MIDI editing. It's highly unlikely you'll be able to make a keyboard sound like a non-keyboard instrument using performance controllers in realtime. Use them to get it in the ballpark. To get convincing results, you have to really understand how the instrument you're trying to imitate is actually played, then dig into the MIDI data in your sequencer and tweak it to mimic the nuances of those techniques.
