Well, I thought I would be able to use the assignable outputs to go to my PRojectmix, but come to find out they do not work like that. So, I need to split the main outputs. One set is going straight to my monitors and one I need to go to my mixer. So, I figure a splitter box will do the job fine, but what I want to know is, am I going to be losing quality by doing this?

Splitting a signal --- any signal --- is a passive process, and if you get a splitter with balanced lines in and out you should notice no loss at all.
If I were you, I'd take this as a chance to integrate a patchbay into your setup. You can set it up with paralell outs, usually referred to as 'mults' to solve your immediate problem and, depending on how much gear you have, it will save alot of crawling around behind the rack every time you want to try a differnt configuration.
